- 1 head romaine, chopped
- 1 cucumber, sliced
- 1 red onion, sliced
- 1/8 cup crumbled feta cheese
- Salt and pepper
- 2 Tbsp Lake George Olive Oil Co. Koroneiki Extra Virgin Olive Oil
- 2 tomatoes, sliced 10-15 kalamata olives, sliced
- 1 tsp oregano
- 2 tsp lemon juice
- Combine lettuce, tomato, cucumber, and onion in a small bowl.
- In a separate bowl, combine oregano, feta cheese, lemon juice, and Lake George Olive Oil Co. Koroneiki Extra Virgin Olive Oil. Whisk until reaching a creamy consistency.
- Season with salt and pepper, then toss with the salad. Serve.
